“Fritti d’Autore” is another initiative conceived and developed by Shara dedicated to the traditional cuisine and wines of the South but designed to highlight a peculiar regional speciality: deep-frying. Excellent fried food is difficult to create—to earn that title the touch of a maestro is often needed to achieve something out of the ordinary. The first event in the initiative was held in November 2013 at Il Chjostro wine bar in Aversa, a location with a magical atmosphere where time seems to stand still. The protagonist of the event, on the occasion called “A night at Il Chjostro with the master deep-fry“, was Salvatore Di Matteo, whose presentation of a new pizza menu paid tribute to his homeland with one new addition: fried pizza served with Aversa’s Asprino wine.
